Restaurant Underwriting Practices

New ventures - principals must have prior management or ownership experience.

No frame construction.

No dancing or entertainment of any kind except background dinner music such as a piano player.

No nightclubs.

No 24 hour operations

All restaurants must have a quarterly cleaning and maintenance contract for an automatic fire protection system that covers all cooking areas. This will be a warranty on the policy. 

Assault & Battery is excluded. 

Liquor Liability is available in New York

No sales of uncooked meat or fish.
